Take that word, spelled exactly the same, but add one space, and turn Impossible into Im Possible.
I made Dorie Greenspan's Dimply Plum Cake for Evan's family during a time of sadness, the passing of his wonderful Grandpa Sy. Sy Eagle, the eternal optimist with a heart of gold. A man who believed that, through happiness and love, anything is possible for him and his family.
I hope that this cake brought a spark of brightness to this difficult time for Evan and his family. I made this cake with the most deliciously ripe Italian sweet plums that I bought at the Farmers Market in NYC. At first Evan and his family were not sure how they felt about plums in desserts, but they were pleasantly surprised with how much they loved the cake. There was not a crumb leftover. Special shout out to Lane for eating half of it!
Watching all of them enjoying this cake while sitting around together, sharing special memories and singing Sy's favorite songs completely overwhelmed me with love in the most incredbile way. I know Sy would have loved to be sitting there with all of us, singing and talking and eating cake.
Thank you, Sy, for inspiring me to believe that anything in this world is possible, and that life is filled with beauty and music and goodness. The only thing I can think of that is impossible is this: It is impossible not to smile when I think of Sy Eagle. You are a special, special person and you will be missed more than words can say.
