After I made my Cinnamon Toast Crunch cupcakes a few days ago, I felt inspired! I love cereal and I love cupcakes, so why not try out other cereal/cupcake combos?!?! And why not try out one of the best cereals ever of all time, Lucky Charms!
Ingredients:
3 cups cake flour sifted (I used 2 1/2 cups, plus 1/2 crushed Lucky Charms cereal)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups granulated sugar
2/3 cup butter or margarine
2 eggs
1 1/2 teaspoons pure vanilla extract
1 1/4 cups milk
Makes: About 12 standard cupcakes.
Preheat oven to 350°F. Grease bottom of two 8-inch round cake pans and line with waxed paper or parchment paper. Sift together flour, baking powder and salt; set aside. Cream sugar and butter together until light. Add eggs and vanilla to creamed mixture and beat until thoroughly mixed. Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Continue beating one minute. Pour into prepared pan. Bake 20-25 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan on rack.
I made a marshmallow frosting, which I must say was sweetness perfection! Here's how I made the frosting:
Ingredients:
1 stick butter - softened
1 jar marshmallow fuff
2 cups Confectioners Sugar
1 tsp Pure Vanilla Extract
Beat butter on high speed until light anf fluffy. Add marshmallow fluff and continue to beat until incorporated. Add sugar and vanilla and beat on high for 5-6 minutes, scraping down the bowl.
So easy to make!
I had the best time decorating my cupcakes with the Lucky Charms marshmallows! I color coordinated some, added sprinkles to some, and basically just played around. I love how colorful these cupcakes are! The cupcakes were moist and fluffy, and the marshmallow frosting was incredible! There really is only one way to describe these cupcakes: Frosted Lucky Charms cupcakes -- they're magically delicious!!!
Whoa. YUM. Can we be best friends? Lucky charms are like crack to me. These are going straight onto my to-do list!
ReplyDeleteYes please! Lucky Charms are the friggin best. I bet these would be great for a party full of kiddies - or I could see them being good for a perfectly respectable adult to lock oneself away in the corner of a dark closet and not come out until they were all eaten!
